Describe your cooking style in three words: Natural. Honest. Homey.
What’s your signature dish? Super Crazy Salads with everything, cold or warm! I could live on them and they’re always my go-to meal.
What do you think is the most underrated ingredient? Fermented foods. They seem to have lost their important role in our diet but besides being one of our best friends they’re delicious. I love their bitter, sour taste. For me they complete a meal.
What’s the best cooking advice you’re ever received? I think the best one was from my grandmother. It’s really very simple but it makes all the difference: When using onions on a salad, season them first with olive oil, lemon juice and salt and let them “cook” for a few minutes before adding the rest of the ingredients. They’ll loose that bitter, raw taste.
If you could share a meal with anyone in history who would it be? Mm... Maybe Frida Kahlo. I can only imagine the incredible stories this amazing artist would have to tell. I’m seeing this big rustic wooden table in a colorful patio, covered with some real, spicy and delicious Mexican food.
