Describe your cooking style in three words: Rustic. Adventurous. Artisanal.
What’s your signature dish? I make a pretty mean Jalapeño Cornbread. The caramelized onions are the kicker on it, I think.
What do you think is the most underrated ingredient? Edible flowers, they add such incredible beauty and flavor to dishes but really aren’t used that much in western cooking, unfortunately.
What’s the best cooking advice you’ve ever received? Don’t be afraid to try new things. You never know what you’ll end up loving if you don’t give it a shot.
If you could share a meal with anyone in history who would it be? Oh this is a tough one. I’d have to go with Thomas Jefferson. I’m kind of a founding father’s nerd, and he also brewed beer, made wine, and had an extensive vegetable and fruit garden at his home in Virginia. He also helped popularize ice cream in the United States. I’d basically have a thousand questions to ask him, both food-centric and otherwise.
