What’s your signature dish? Ricotta Squash Gnocch.
What do you think is the most underrated ingredient? Spices. Seasoning food with fresh spices can elevate a meal and requires less salt to taste great.
What’s the best cooking advice you’ve ever received? When I first moved out on my own, my mother bought me a Pol Martin cookbook. It was packed with elaborate recipes and it was scary to even open the book as a novice cook. My mother told me, “You can make anything you want in this book, just get in the kitchen and do it.” My roommate and I ate very well after that advice. It’s not only great advice for the kitchen, but for life. You can do anything...You just have to take the first step.
If you could share a meal with anyone in history who would it be? My mother. She passed away eight years ago and in that time my culinary skills have changed a lot. I would love to make her a meal and watch her eyes light up as she took her first bite. She wasn’t much of a cook, but she definitely loved a great meal.
