Describe your cooking style in three words: Flavorful. Seasonal. Light.
What’s your signature dish? Crepes. I’ve had many years of experience and have to say that I can whip up some delicious and very thin crepes. Most recently, I’ve been making buckwheat flour crepes, at times with some greens whipped into the batter.
What do you think is the most underrated ingredient? Rutabaga.
What’s the best cooking advice you’ve ever received? To cook with seasonal ingredients. When ingredients are in season, they are cheaper and at their peak flavor. It’s a win-win.
If you could share a meal with anyone in history who would it be? Vladimir Pozner, who is a Russian-American journalist of incredible intelligence and broad mind.
