What’s your signature dish? My family and friends say Red Wine Braised Venison over Pumpkin Risotto but as for as the blog goes, it’s Rosemary and Garlic Roasted Salmon.
What do you think is the most underrated ingredient? Homemade stocks. They’re incredibly easy to make and make everything taste amazing.
What’s the best cooking advice you’ve ever received? Never apologize for your food. Just learn, move on, and open a bottle of wine.
If you could share a meal with anyone in history who would it be? I’m reading Gramercy Tavern right now and I’m completely drawn in. So, I’d have to say at this moment, I’d love to sit down over a beautiful meal with Chef Anthony... And the entire staff at Gramercy Tavern.
