What’s your signature dish? My savory signature dish: Blanquette de Veau. My sweet signature treat: Chocolate Layer Cake with Mocha Buttercream frosting.
What do you think is the most underrated ingredient? Vanilla, rum, mascarpone... It is too difficult a question!
What’s the best cooking advice you’ve ever received? Taste.
If you could share a meal with anyone in history who would it be? Charles Dickens. The way Dickens describes food and eating in his novels, in such particular detail, one comes to understand how important he considers both to body and soul as well as the curious social pleasures and necessities of food and dining. Dickens supposedly took serious pleasure in eating and wouldn’t I love to sit down to table and share a meal with my favorite author, eating and drinking heartily and listening to him regale me with tales of his travels and stories from his imagination!
