Describe your cooking style in three words: Healthy. Hearty. International.
What's your signature dish? Definitely something Mexican. I suppose either vegan tostadas or potato-cashew flautas with cashew cream and avocado salsa verde.
What do you think is the most underrated ingredient? Lime. I know it seems common, but I find that it could be used a lot more in dishes and so easily enhances the flavor. Also, I find I end up putting a lot less salt on a dish if it has lime.
What's the best cooking advice you've ever received? Don't rely too much on recipes, trust your own instincts. Sometimes our stomachs and own imagination are our best guide in the kitchen!
If you could share a meal with anyone in history who would it be? Does fiction count? If so, it would be Tita, the protagonist from Laura Esquivel's novel Like Water For Chocolate. When reading that book I wanted to be transported to her kitchen where I could taste—and learn how to make—all of those amazing dishes. If not fiction, than I'll go with Laura Esquivel, as I'm sure she knows a thing or two about authentic and delicious Mexican food as well!
