Since the late nineties, Mallika Basu has been bringing the wonders of Indian Cuisine to the web. Born and raised in Kolkata, India, she moved to England to study when she was eighteen, and the rest is, as they say, history. “Live life. Love curry,” is her motto. What’s your signature dish? My Three Spice Indian Chicken Curry.
What do you think is the most underrated ingredient? Greek, thick yogurt. It tenderizes meat, thickens curries and soothes the tummy. What’s not to like?
What’s the best cooking advice you’ve ever received? From my Dad: You can’t be afraid of hot oil if you want to be a cook.
If you could share a meal with anyone in history who would it be? This is a really tough one! It would probably be a great feminist figure from yesterday, like Rani Lakshmibai, one of the fiercest 19th Century Indian Queens or Emily Pankhurst of the Suffragettes. We owe these powerful women, everything we have today.
