What’s your signature dish? A simple linguine with asparagus and fresh mozzarella.
What do you think is the most underrated ingredient? Here in Portugal, it is definitely the pumpkin, it’s mainly used for soups and nothing else, and what a shame that is.
What’s the best cooking advice you’ve ever received? “Don’t ever let go of the pasta cooking water,” and the fact is that I have always known that, so I guess that just believing in my instinct is what I must keep doing at all times.
If you could share a meal with anyone in history who would it be? Napoleon for sure. I grew up reading French romances so I kind of fell in love with the image of this warrior and leader and I can imagine myself in a beautiful French château, surrounded by French elegance with delicious French food including French, buttery croissants.
