Describe your cooking style in three words: Approachable. Traditionalist. Deliberate.
What’s your signature dish? I have a gluten-free pizza crust recipe that is very popular; I’m proud to be able to give quality pizza back to those who thought they’d have to forgo it for the rest of their lives.
What do you think is the most underrated ingredient? Vinegar. I think it is just as important as salt and pepper in seasoning a dish.
What’s the best cooking advice you’ve ever received? The best advice I’ve ever received was to treat the time indicated on a recipe as merely suggestion; temperature, texture and color are much better indicators of when a dish is done.
If you could share a meal with anyone in history who would it be? I’d love to share a meal with someone from our ancient history, like Hippocrates. I think it would be really interesting to compare the foods he ate to what we have available today.
