What's your signature dish? Grilled Shriracha King Prawns with Mango Salsa, paired with classic Margarita.
What do you think is the most underrated ingredient? Shichimi. It's a Japanese spice mixture made with seven ingredients. Fragrant and aromatic with a nice spicy kick, it can be used for anything from rubs and marinades, for topping soups, noodles, rice and salads or as a seasoning for grilled meat and fish.
What's the best cooking advice you've ever received? Get to know your ingredients and never stop trying new ones. Learn their nutritional information, history, usage and season-ability.
If you could share a meal with anyone in history, who would it be? I would love to have dinner with J.R.R Tolkien and C.S. Lewis together, who were very close friends. I grew up reading their fantasy stories, and I'm sure having dinner with these two master storytellers would generate very interesting dinner conversations.
