Describe your cooking style in three words: Vegetarian. Seasonal. Adventurous.
What’s your signature dish? Roasted Veggie Enchiladas. I love how you can just roast up whatever vegetables are in season and make a filling out of them with a handful of gooey cheese and seasoned black beans.
What do you think is the most underrated ingredient? Edible flowers: whether it’s dried hibiscus or fresh nasturtium, they can add an interesting texture and beautiful colors to almost any dish.
What’s the best cooking advice you’ve ever received? Save your produce scraps and make your own vegetable broth with them. The deep and rich flavor you get from fresh vegetable broth is something that boxed broth can never re-create and it makes a world of difference in recipes.
If you could share a meal with anyone in history who would it be? Isa Chandra Moskowitz. Her vegan cookbooks helped introduce me into the world of cooking without animal products when I was first getting inspired in the kitchen.
